I made this one for my wonderful mum. It was her birthday last week and we had to celebrate with cake. The tricky thing with making cakes for my mum is that she is allergic to chocolate (gasp! say it isn’t so!). The problem isn’t her allergy, but my complete lack of non-chocolate recipes. Until now, that is. This one was super easy to whip up, I classify it as a “messy cake”, because I didn’t have to work the ganache to look perfectly smooth, instead the coconut pecan frosting had a natural texture to it. And the cakes, I’ve never made such flat, nearly professional looking layers before. Next time, I might just split these 3 layers into 6 and incorporate even more of that dreamy frosting.
