It’s cookie day once again at work, and I have been craving to bake a cheesecake. Something with a little pizazz. So I did a little searching at a few of my favourite places and cake across these devastatingly simple and delicious cheesecake bars. Not sure about the chocolate. (I know, you are thinking: what? no chocolate!?! is she sick?)Rest assured. I am not ill. I had thought about doing one more like this sweet little number — raspberry swirl cheesecake. Don’t the swirls look like tiny hearts? I can’t decide, oh well. I do have a little while to think it over…

**Post update: I have just finished making the chocolate cheesecake bars! They are cooling as we speak! Can’t wait to see how they turn out. I am a little nervous about cutting them, hopefully it goes smoothly!!**
